Given its competitive F&B landscape in Singapore, especially among bistros, we will be seeing more of them attempting to inject quirky concepts to distinguish from mainstream. It’s not an easy feat, and we agree that even those that place too much emphasis on concepts might not ace it on what matters most – quality of food. But Fravel seem to have found the perfect balance – a “”modernist larder” attitude in the form of The Marmalade Pantry.
Luxury comfort food defines the experience over at The Marmalade Pantry. From crabmeat linguine to sakura ebi, you’ll be spoilt for choice! But we focused on a couple of favourites instead, for fear of not fulfilling our desires of tasting everything on the plate!
The Mexican Chicken Salad (SGD$$22) comprises of a mixture of crispy tortilla, avocado, spiced corn, salsa, creme fraiche and romaine lettuce. We’re no expert when it comes to Mexican food, but we could tell that the salad dressing is key in this dish. It does not taste overly dry. Rather, you could dip the chips into the dressing and enjoy an authentic flavour right from the get-go.
Traditional Carbonara was one of the main highlights of the meal. Spaghetti with slow cooked egg, bacon, parmesan cheese, parsley & bacon. It looks photogenic, too! Primarily due to the well-cut cheese slices that could easily pass of as white chocolate for those not kept in the loop!
Pan-Seared Salmon, in our opinion, needs something special to be differentiated from other restaurants. After all, it’s a common dish that couldn’t go much wrong, if the salmon is fresh! This adds a unique twist, as the salmon is presented on a bed of chilled sweet potato noodles, sesame & cucumber with yuzu dressing.
Old Fashioned Chocolate Fudge Cake (SGD$9). We’re not entirely sure what “old fashion” means, but if that implies sticky, goo-ey chunks of chocolate sauce, we’re definitely digging it! A highlight of the meal, in a restaurant that we would be back not before long. Let’s wait for the crowd to subside first, if they even tone down anytime soon!
